Some January Comfort Food….

January Blues? Need some nice warm SW friendly food to cheer you and your belly up? I have just the things…

Β Chickpea Curry

  • 1 finely chopped large carrot
  • 1 finely chopped onion
  • 1 tin chopped tomatoes
  • 2 tins chickpeas
  • 200g red lentils
  • 500ml vegetable stock
  • 1tsp garlic
  • 1tsp ginger
  • 2tsp medium curry powder
  • 2tsp garam masala
  • 2 big handfuls of fresh spinach

Start with some frylight in a pan, add your garlic, ginger, onions and carrots and let those start to soften. Add in the curry powder and garam masala and let that start to cook (just a couple of mins) That should take about 10 mins or so. Add to that the tin of tomatoes, chickpeas, lentils and stock. Bring that to the boil and then lower the heat and let it simmer away for about 30 mins (until the chickpeas are softening) You can either turn it off now and save for later (reheat, then add the spinach before serving) or you can add the spinach now. Allow it to soften and its ready to serve!

Macaroni Frittata – this makes 4 portions and is 1/2 HexA per serving

You’ll need a silicone mould for this one folks!

  • Macaroni to fill the base of the silicone mould – depends how much you need for yours! It needs to fill it about 1/2 full
  • Tin sweetcorn
  • One chopped red pepper
  • One chopped yellow pepper
  • 1 chopped bunch of spring onions
  • 1tsp chilli flakes
  • 1tsp garlic powder
  • 80g low fat cheese
  • 4 eggs

 

Cook the macaroni until soft. Cool it rapidly in cold water and drain. Beat the 4 eggs well in a big bowl.Β  Mix in with all the chopped vegetables, sweetcorn and seasoning. Add in 3/4 of the cheese and stir well. Pour into the mould and flatten down a little. Sprinkle the remaining cheese on top and cook in the oven for about 30 mins until the cheese is melted and golden. I reckon it would be equally nice with some cottage

cheese in there too! Id possibly also add some red onions, jalepeneos, anything really that was in my fridge!!!
